Braised Country Style Pork Ribs
Ingredients:

4 Packages Yampa Valley Farms Country Style Ribs

2 Onions
-
2 Carrots
-
2 Stalks Celery
-
2 Beers 12oz.

Spice Rub (recipe follows)
Directions:

Preheat oven to 275°F.

Roughly chop carrots, onions, and celery. Arrange in baking dish.

Mix all ingredients in the spice rub and coat all sides of country ribs
-
Sear ribs in a preheated and seasoned sauté pan in batches.

Place ribs on top of your vegetable mix.

After you have seared your ribs there will be a burned coating on the bottom of the pan. While hot pour in the first beer and continue heating. Scape the bottom of the pan with a wooden spoon to loosen what is stuck to the pan. Add your second beer after the first has foamed and allow it to heat and release its carbonation.

Pour the heated beer and pan scrapings into the baking dish with the vegetables and the ribs. Add hot water until the liquid is level with the bottom of the ribs.

Cover your dish first with a layer of plastic wrap, then a covering layer of foil.

Place dish in the oven and allow to braise for six to seven hours. Ribs are done when tender enough to pull apart.

You may strain and reduce the braising liquid by two-thirds for a tasty sauce.
Recommended Serving with cheesy grits and roasted vegetables

¼ C Brown Sugar

2T Salt

2T Chili Powder

2T Paprika
-
1T Cumin
-
1t Garlic Powder

1t Onion Powder
